Petite® Pea with Tendril™ flaunts a true pea tendril with leaves. Blanch these to enhance color and tenderness and bring a striking visual to your plate.
Petite® Pea Lemonade
Ingredients

Petite® Pea with Tendril™

1.5 oz Petite® Pea Syrup*

1 oz Lemon Juice

Sparkling Water
*Petite® Pea Syrup:
- 400 g Petite® Pea with Tendril™
- 400 g Water
- 230 g Sugar
- Method: Combine Petite® Pea with Tendril™ and water in a blender. Blend and strain mixture. Rinse blender and add strained pea and water mixture back along with sugar. Blend again until combined. Let sit for 20 minutes and store refrigerated in an airtight container. (Note: this recipe is less sweet than traditional syrups to highlight the fresh, vegetal flavors of the Petite® Pea with Tendril™. For a sweeter syrup, up the sugar to 400 g.
Method

Add Petite® Pea Syrup and lemon juice in a cocktail shaker filled with a small amount of pebble ice.

Cover and whip shake to chill and dilute the mixture.

Dump directly into a Collins glass and top with sparkling water. Stir a few times to blend the water with the syrup and lemon juice mixture.

Add additional pebble ice to the top of the glass and finish with a few fresh tendrils of Petite® Pea with Tendril™.
